Kugel is a traditional Jewish dish originating from eastern Europe. I first discovered this recipe when trying to find something I could make with the limited ingredients I had left in my cupboard.

It's really simple to make and doesn't take many ingredients so is ideal for those nights after work where you're not in the mood for anything complicated.

This works on it's own or served with a side of vegetables.

Ingredients

8 potatoes
6 eggs
1 large onion
2 tbsp olive oil
1 tbsp butter
3 garlic cloves
salt
black pepper
cheddar cheese (optional)

Directions

Preheat oven to 180 degrees F (356 degrees C).

Peel and shred potatoes.

Peel and grate onion.

Crush garlic.

Whisk eggs, vegetable oil, garlic, salt, and black pepper in a large bowl.

Add potatoes, butter and onion to bowl and stir mixture.

Pour mixture into a large baking dish and top with grated cheese if required.

Bake for about 40 minutes until potatoes are tender.
